There is considerable disagreement about her date of birth, all presumably based on her tombstone.
Parent-Proof notes for Johannes (Spouse 1)
The records of Moselem Church show a son Johannes born in 1753 to John Jacob and Eva Maria, but then another son also named Johannes born 20 Dec 1763 to the same couple. Meiser said the first son died in infancy and gave the birth date of the second Johannes as 30 Dec 1763.
We know that the John Hummel who died in Mifflin County was 87 in the 1850 Census and 91 when he died in 1854. I think everything fits that Johannes of New Berlin was the son born in 1763 to John Jacob and Eva Marie.

THE MIFFLIN COUNTY HUMMELS
Johannes seems to have first moved to East Buffalo Township (now Union County) at about the time his brothers came to Penns Township, then lived in New Berlin and finally by 1840 had moved further west and settled in Mifflin County.
Census History notes for Johannes (Spouse 1)
1790. I believe he is the John Hummel in Windsor Twp, Berk Co. The household has two older males and one female. I think Johannes marries after he moves to Union County, so this is possibly he and a brother and sister.
1800-1810. He lives in E Buffalo Twp, North’d Co age 25-45 in 1800 and then 45+ in 1810.
1820 and 1830. He lives in Union Twp, Union Co.
1840. John is living most likely with a son and his growing family, but where is Eve who is supposed to be about to die?
1850. John age 87 lives with his son Elias in Decatur Twp, Mifflin County.
A Peter Hummel lives in 1820 in W Buffalo age 26-45 and in 1840 in Buffalo age 20-30. I’m not sure who he is or if he relates to Johannes.

I found a death record for John in Mifflin County. John Hummel, shoemaker, died in Derry Twp, 28 Sep 1854 age 91, son of Jacob. Said to have had two wives: Margaret Moyer and Eve Moyer. Left surviving issue: Margaret, Eve, Mary, John, Jacob, Elias, Rosanna. John of New Berlin moved to Derry Twp after both wives died to live with his son.
John Hummel is listed continuously in Union County, E Buffalo Twp tax records from 1793 when they began until 1813 -- when it no longer was part of Northumberland Co. He is an innkeeper and typically is listed twice -- with 50 acres and with 94 acres.
